At Greg Seider’s clandestine cocktail lounge, ammong plush velvet, dimpled leather banquettes and dark wood, there are a handful of drinks you’ll want to order more than once, but none as cocksure as this pointedly named sipper. Toasted garam masala spices sweet, caramely Santa Teresa 1796 rum, hit with lime juice and Fever Tree club soda, with a sprinkling of microplaned ginger root on top for extra zing.

At the Manhattan Cricket Club — an elegant Upper West Side bar hidden inside another bar — you can order from a menu that gives you the usual options (gin/vodka, wet/dry, etc), but then you can take things to the next level with paté-stuffed olives, an oyster topped with salmon roe, or a host of other garnish options. The drink is presented to you in your comfy club chair on a silver tray, with a second serving chilling on ice in a small beaker. The entire effect is designed to transport you (and ideally, a date) on a brief journey to another, classier, era.

The UWS isn’t exactly known as a cocktail destination, but this hidden bar is an oasis. The drinks here highlight unique, interesting flavors (pistachio or tomato mists, mace blade tinctures), but they’re decidedly unfussy -- few items on the menu count more than four ingredients -- so you won’t have to wait for ages for your cocktail (more than we can say about some other picks on this list). That and the cozy atmosphere (yes, that is a collection of books lining a back wall) make this an ideal after-work drinking spot.

How to get in: Enter Burke & Wills and head to the back, where you’ll ascend some stairs behind a green leather door; a hostess will almost certainly guide you to the upstairs bar.
